Final report of the priority action A-027-23

The aim of the priority action was to check the hygienic conditions of raw cured products that are offered on mountain pastures and possibly also produced there (or in the region) as well as the maximum levels of polycyclic aromatic hydrocarbons (PAHs).

46 samples from all over Austria were analysed. Four samples were rejected:

  • Three samples for exceeding the maximum levels for PAHs
  • One sample due to hygiene deficiencies

PAHs such as benzo[a]pyrene are carcinogenic substances that are produced by incomplete combustion processes of organic materials (wood, coal, petrol, oil, tobacco, waste) or when grilling, frying, smoking or drying food. Standardised maximum levels apply throughout the EU for PAHs.
