The aim of the focus campaign was to randomly check compliance with good hygiene practices in communal catering facilities (retirement and nursing homes, residential homes, hospitals, boarding schools, schools, kindergartens, after-school care centres) and in the catering sector (restaurants, hotels, guesthouses, cafés, canteens, snack bars, restaurants).
1,615 samples from all over Austria were analysed. 118 samples were rejected, in some cases more than once:
- Five samples were judged to be harmful to health (microbiology, histamine)
- 24 samples were deemed unfit for human consumption (microbiology, organoleptics)
- Eight samples were rejected due to hygiene violations (storage temperature)
- 39 samples were assessed as impaired (microbiology)
