The aim of the focus campaign was to randomly check compliance with good hygiene practices in the canteen kitchens of nursing and retirement homes, hospitals and rehabilitation centres.

The microbiological parameters examined were spoilage and hygiene indicator germs (aerobic mesophilic germs, Enterobacteriaceae, Escherichia coli, coagulase-positive staphylococci, presumptive Bacillus cereus).
201 samples from all over Austria were analysed. One sample was rejected:
