The aim of this priority action was to review the legal requirements in the delicatessen sector of branches of retail chains and individual businesses. The inspection of the self-monitoring systems revealed some serious deficiencies. For example, only 32 of the 67 delicatessen departments inspected had hazard analyses for the products manufactured.
